Ingredients:
- 2 boneless, skinless chicken breasts
- 1 cup BBQ sauce
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- 1/2 cup diced red onion
- 1/2 cup diced bell peppers any color
- 1/4 cup chopped fresh cilantro
- 4 large flour tortillas
- Salt and pepper to taste
- Cooking oil for grilling
Instructions:
Warm up your grill or grill pan on the stove by setting it on medium-high heat
Add salt and pepper to the chicken breasts
As long as the chicken breasts are cooked all the way through and have nice grill marks, they are done
Just before you take the chicken off the grill, brush it with BBQ sauce
Keep cooking until the sauce turns caramelized and sticks to the chicken
Take it off the heat and let it rest for a few minutes
Then cut it into strips
Warm the tortillas on the grill for about 30 seconds on each side, or until they are soft and slightly charred, while the chicken rests
Place a tortilla on a flat surface and place a scoop of cooked rice in the middle of it
Mix black beans, red onion, bell pepper, and cheddar cheese into small pieces
Add fresh cilantro on top
On top of the other things, put the sliced BBQ chicken
If you want, you can add more BBQ sauce to the chicken
This will make a burrito
Fold the sides of the tortilla in and then roll it up tightly from the bottom up
Do the same steps again with the rest of the tortillas and ingredients
You can put each burrito in foil and warm it up on the grill for a few minutes to melt the cheese and warm everything through
Enjoy the BBQ chicken burritos while they're still hot!
