Ingredients:
- 200g finely ground pistachios
- 200g powdered sugar
- 150g almond flour
- 4 large egg whites
- 150g granulated sugar
- 1/4 tsp cream of tartar
- Green food coloring optional
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 tsp ground cardamom
- 1 tsp orange blossom water
- 1/2 tsp vanilla extract
- Crushed pistachios for garnish
Instructions:
Preheat your oven to 300F 150C
Line two baking sheets with parchment paper
In a large bowl, sift together the finely ground pistachios, powdered sugar, and almond flour
Set aside
In a separate bowl, beat the egg whites until foamy
Add the cream of tartar and continue beating
Gradually add the granulated sugar while beating until stiff, glossy peaks form
If desired, add a few drops of green food coloring and mix until evenly colored
Gently fold the egg white mixture into the dry ingredients until well combined
Be careful not to overmix; the batter should be smooth and thick
Transfer the batter to a piping bag fitted with a round tip
Pipe small circles onto the prepared baking sheets, spacing them about 1 inch apart
Tap the baking sheets on the counter to remove air bubbles
Let the macarons sit at room temperature for about 20-30 minutes until a skin forms on top
This helps create the signature macaron feet
Bake in the preheated oven for 15-18 minutes, rotating the sheets halfway through
The macarons should be firm and easily lift off the parchment paper when done
While the macarons cool, prepare the mousse
In a bowl, whip the heavy cream until it begins to thicken
Add the powdered sugar, ground cardamom, orange blossom water, and vanilla extract
Continue whipping until stiff peaks form
Once the macarons are completely cooled, pair them up by size and spread a generous amount of the cardamom-orange blossom mousse on one macaron shell
Top with another shell to create a sandwich
Repeat with all the macarons
Garnish the assembled macarons by dipping the edges in crushed pistachios
Refrigerate the macarons for at least an hour before serving to allow the flavors to meld together
