A filling and tasty BLT sandwich with avocado that is creamy, bacon that is crispy, tomato that is juicy, and arugula that is peppery. It's great for a quick and healthy meal!
Ingredients:
- 2 slices whole grain bread
- 2 slices center-cut bacon, cooked
- 1/4 avocado, mashed
- 1 tomato, sliced
- 1 cup arugula leaves
- 1 teaspoon olive oil
- 1 teaspoon lemon juice
- Salt and pepper to taste
Instructions:
One piece of bread should have avocado mashed on it
On top of the avocado, put slices of tomato, bacon, and arugula leaves
Add lemon juice and olive oil to the arugula
Add pepper and salt
Put the second slice of bread on top to make a sandwich
Cut in half and serve
