Ingredients:
- 8 rice paper wrappers
- 1 cup cooked shrimp, peeled and deveined
- 1 cup rice vermicelli noodles, cooked and cooled
- 1 cup fresh lettuce leaves
- 1 cup fresh mint leaves
- 1 cup fresh cilantro leaves
- 1/2 cucumber, thinly sliced
- 1/2 carrot, thinly sliced into matchsticks
Instructions:
Get a big bowl of warm water ready
Put a rice paper wrapper into the warm water and hold it there for 10 seconds until it softens
When the wrapper is soft, lay it flat on a clean surface
In the middle of the wrapper, put some shrimp, rice vermicelli noodles, lettuce leaves, mint leaves, cilantro leaves, onion slices, and carrot sticks
First, fold the sides of the wrapper over the filling
Then, roll it up tightly from the bottom, like you would a burrito
Do it again with the rest of the wrappers and filling
Put 1/4 cup of peanut butter, 2 tablespoons of soy sauce, 2 tablespoons of honey, 1 tablespoon of rice vinegar, 1 teaspoon of sesame oil, and a pinch of red pepper flakes in a small bowl
Pour in the honey and mix well
You can dip the summer rolls in the peanut sauce that you serve with them
