Keto Cauliflower Mac and Cheese



This recipe is a tasty and creamy keto-friendly alternative to regular mac and cheese. Instead of pasta, it uses cauliflower and still has all the cheesy goodness. It's great for a cozy family dinner or as a side dish at a party.

Ingredients:

  • 1 medium cauliflower, cut into florets
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 2 tablespoons cream cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped parsley for garnish optional

Instructions:

Before you start cooking, heat the oven to 375F 190C

For about 5 to 7 minutes, or until soft, steam or boil the cauliflower florets

Set aside and drain well

Slowly bring the heavy cream to a boil in a saucepan over medium-low heat

Turn down the heat and add the cream cheese, garlic powder, onion powder, salt, and pepper

Mix the cheeses in until the sauce is smooth and the cheeses melt

Put the cooked cauliflower into the cheese sauce and gently stir it to cover it all

Put the cauliflower mixture in a baking dish and make sure it's spread out evenly

Bake in an oven that has already been heated for 15 to 20 minutes, or until the top is bubbly and golden

If you want, you can add chopped parsley as a garnish before serving
