Gluten-Free Caprese Chicken



This Gluten-Free Caprese Chicken recipe combines the classic flavors of caprese salad with tender, juicy chicken breasts. It's a simple yet elegant dish that's perfect for a quick weeknight dinner.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 slices fresh mozzarella cheese
  • 2 large ripe tomatoes, sliced
  • 1/4 cup fresh basil leaves
  • Balsamic glaze for drizzling gluten-free

Instructions:

Preheat the oven to 400F 200C

Season both sides of the chicken breasts with salt and pepper

In a large skillet, heat olive oil over medium-high heat

Add the chicken breasts and cook until golden brown on both sides, about 3-4 minutes per side

Transfer the chicken breasts to a baking dish lined with parchment paper or lightly greased

Top each chicken breast with a slice of fresh mozzarella cheese

Arrange tomato slices on top of the cheese

Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly

Remove from the oven and garnish with fresh basil leaves

Drizzle balsamic glaze over the chicken breasts before serving

Serve hot and enjoy!
