Cornflake-Chocolate Chip-Marshmallow Cookies Momofuku



A delightful twist on classic chocolate chip cookies, these Cornflake-Chocolate Chip-Marshmallow Cookies combine the crunch of cornflakes, the sweetness of chocolate chips, and the gooey goodness of mini marshmallows.

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2/3 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups cornflakes
  • 1 cup semisweet chocolate chips
  • 1 cup mini marshmallows

Instructions:

Preheat the oven to 350F 175C and line baking sheets with parchment paper

In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy

Beat in the eggs, one at a time, and then stir in the vanilla extract

In a separate bowl, whisk together the flour, baking powder, baking soda, and salt

Gradually add the dry ingredients to the wet ingredients, mixing until just combined

Gently fold in the cornflakes, chocolate chips, and mini marshmallows

Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheets

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown

Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely
